SteamOS is based on Arch, which you do not want to use and maintain as a beginner. what matter is the desktop environment, which in SteamOS’ case is KDE Plasma, a great choice in my completely unbiased opinion.
I don’t know about Android to iOS or vice versa, but it definitely works between two Android devices.

no, there are only open source modifications of the closed source client.
FYI, if you install another F-droid client on the older devices, the apps installed with the official client will still be receiving updates through the new one.
