The only point of custom ROMs in Android is to remove Google stuff.
Its not like on a Computer. You dont really have alot of choice. You have to have someone maintain a custom ROM for your phone model. And two phones using the same name will not be compatible with each other.

No need, just switching to alternate DNS works. Also ISPs dont care about it.
One thing is funny though, people tend to think its a secret feature to switch to an alternate DNS server. Like they are the only ones who know this. Network Engineers in ISPs study this thing. They know it, they just dont care if you bypass this nationwide filter. They are doing this just to show that they are following government rules.

Yes, that second part, I meant that. I used to send my log files in a dark web forums and one of them started teasing me with my real name. It wasnt as bad but “Dark Web” users knowing your real name is weird.

By ghost files I meant files inside /proc /sys /dev that does not exist when OS is not booted
Its Linux, everything is a file, this means your uptime is also stored in some (possibly ghost file) that you can access through the filesystem and change it
