I’ve been on 1080p since highschool, over 15 years, works perfectly for me. I value high frame rate over resolution/fidelity. Luckily for me, even mid-tier hardware is so powerful now, AAA games on ultra at 1080p can easily hit 160+

Steam, because most my games are on there.
Discord, because most my friends and social groups are on there.
Both are good, but different focuses. OnlyOffice has fewer features, but extremely good MS Office cross-compatibility.
Libre Office has more features, but can run into compatibility issues when going back and forth between MS Office.
That being said, for the average user’s needs, both are perfectly fine.
OnlyOffice is also able to be used in a cloud framework similar to Google docs, but to my knowledge Libre Office cannot do that.

If you’re on a budget, check out X99 socket Xeons. You can pick up Mobos and chips for super cheap. 10+ core hyper-threaded Xeons with solid clocks and a motherboard for 120-180 bucks total. Support 64 GB of RAM, more if you have a proper server board.
For transcoding, depending on the codec, dedicated GPU is best.
I’m not sure about Plex, but I know on Jellyfin, the new Intel Arc GPUs are really great for encoding, not too expensive for the lower end cards either, and low profile options for smaller rack cases.
For general system stats, I like btop. It runs in the terminal, so you can monitor it through SSH remotely. It also is much more readable than some of the other older top process monitors.
Docker desktop is a nice GUI interface for local docker container management, Portainer if you want something more enterprise grade.
XCP-ng or Proxmox if you need a bare metal hypervisor. Both open source, powerful, mature, and have large communities with lots of helpful documentation.
I think you can migrate ESXi VMs directly to XCP-ng. I have moved onto it about 6 months ago and it has been solid. Steep learning curve, but really great once you get the hang of it, and enterprise grade if you need stuff like HA clustering and complex virtual networking solutions.

IT workers desperately need to unionize. There is so much bullshit that happens, folks are expected to do three different roles at once, have multiple technical stacks they are experts in, and work extra hours + be on call after hours or on weekends.
